How do I use a packet sniffer to find out the packets being used so I can send many more of the packets to the server with wpe pro?

erm, im not too sure what your asking. But cain has a packet sniffer feature. Maybe that will be useful.

Try etherreal. www.etherreal.com. Great Network protocol analyzer. Supports alot of OS's. Also see the documentation.
