Rooting servers

So i get the jist of it. i have read and understand BoF attacks. but one thing that troubles me. I get a server right… say i do havent though. and i get my PuTTY shit, connect but… i have to login… now, if you find a server you wanna try… how to you connect when you dont know the username and password to get in!?
